Ingredients

  • 4 eggs, separated
  • 2 cups Monterey Jack Cheese, grated
  • 2 cups shredded cheddar cheese
  • 2 cups ham, diced
  • 12 oz evaporated milk
  • 4 oz diced green chilis
  • 1 tbsp flour
  • 1 tsp salt
  • 1 tsp pepper

Instructions

Beat egg whites until stiff. Spread cheeses in bottom of a greased 9×13 baking dish. In a separate bowl, combine evaporated milk, ham, chilies, egg yolks, flour, salt, and pepper, then gently fold into egg whites. Pour mixture on top of cheese. Bake for one hour at 325 degrees.

Ingredients

  • 1 cup wheat flour
  • 1 cup white flour
  • 1 1/4 cup sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup zucchini, finely grated
  • 1 cup carrot, finely grated
  • 1 apple, peeled and finely grated
  • 1/2 cup coconut, shredded
  • 3 eggs
  • 1/2 cup applesauce
  • 1/2 cup oil
  • 2 tsp vanilla

Instructions

Combine the flour, sugar, soda, cinnamon and salt in a large mixing bowl. Stir in the grated zucchini, carrot, apple, and coconut. In a separate bowl, mix eggs, applesauce, oil, and vanilla, then add to the flour mixture until combined.

Line muffin tins with paper liners and fill the liners about 3/4 full of batter.

Bake at 350 degrees for 30-35 minutes.

Notes

Freezes really well for quick breakfasts!

One day, I had a craving for French Toast and Ham and Eggs but I was being a little lazy and didn’t want to cook everything separately. So I began creating Egg-in-the-Hole and just kind of added to it! So here is my upgraded version!

An upgrade to your egg-in-the-hole breakfast!

Ingredients

  • 1 slice of Bread
  • Butter
  • 1 whole Egg
  • Salt To Taste
  • Pepper To Taste
  • Cinnamon Sugar to Taste
  • 1 Thick Slice or 2-3 thin slices of ham

Instructions

Cut a hole in the center of your bread with a biscuit cutter or the rim of a glass.

Spread butter over your bread and sprinkle with cinnamon sugar.

Heat a skillet and melt some butter. Place the bread in the skillet face down and quickly spread butter and sprinkle the other side with cinnamon sugar.

Crack your egg into the center of the hole. Sprinkle egg with salt and pepper. After about a minute, flip it over and then salt and pepper that side. Cook until the egg is cooked soft.

Top with Ham Slice(s). Turn it over again to warm the ham.

Serve with Maple Syrup.

I love biscuits and gravy. They are the ultimate comfort food for me. These biscuits work great with gravy or just serve it with your dinner with some honey. Sooo good. I have many memories of going up to the family ranch for a cook-out and having my Grandpa Sorensen make his amazing buttermilk biscuits in the dutch oven. We would sneak pieces of the dough – it was really that good. This is the closest recipe that I have ever had to what my Grandpa’s tasted like. Yum!

Ingredients

    Biscuits:
  • 2 1/4 cups flour, plus more for dusting
  • 2 tbsp baking powder
  • 3 tsp sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 8 tbsp cold butter, diced
  • 1 cup cold buttermilk
  • Gravy:
  • 1 lb pork sausage
  • 1 tbsp minced onion
  • 6 tbsp flour
  • 4 cups whole milk
  • 1 tsp Pepper
  • 1-2 dashes of Worcestershire sauce
  • 2 tbsp Season Salt

Instructions

Preheat oven to 350 degrees and line a baking sheet with parchment paper.

In a large bowl, mix together flour, baking powder, sugar, baking soda, and salt. Cut in the butter using a pastry blender until the mixture resembles coarse meal. Fold in the buttermilk just until all of the flour is moistened. Turn the dough out onto a lightly floured work surface and knead lightly until the dough comes together. Gently roll out and use a biscuit cutter to cut doughs into circles. Place the circles onto baking sheet and bake 12 minutes.

For Gravy: crumble sausage into skillet and fry with the onion and worcestershire sauce. When sausage is fully cooked, stir the flour into the sausage to make a roux. Add milk and stir constantly until gravy thickens. Add pepper and season salt. Serve over biscuits.

Beth is such a character! Her sense of humor mirrors her daddy’s and Joey gets such a kick out of that. She says the funniest things all the time and I need to capture more of these little fun moments.

Joey has never really eaten breakfast – even as a child. As he’s gotten older, it has actually gotten to the point where if he eats too soon after waking up, it makes him nauseous. This morning, Beth was sitting at the kid’s table eating a bowl of cereal, while Joey sat nearby working on his laptop.

“Daddy,” Beth said, “you forgot to eat some breakfast.”
“I didn’t forget, pumpernickel. Daddy just doesn’t eat breakfast.”
“Why not?” she asked.
“Well, I’ve just never been very good at it.”
“It’s EASY, Daddy – you just do like this!” Beth explained, moving the spoon from her bowl to her mouth several times.

I had the opportunity to attend a Relief Society fireside tonight and I am so glad that I went. David Osmond spoke to us about his life and about how the Savior and the gospel has helped him through trials. He has a wonderful voice and sang several songs to us as well that just really filled me with the spirit. While I was gone, Joey and the kids went to the playground and also rode on their trike/scooter! They haven’t been able to play outside much and the weather was finally perfect for it.

Could it possibly be Spring? After the snow and rain we have been getting it’s kind of hard to think that maybe Spring is finally here. These are some beautiful flowers that are in my yard that seemed to just pop up out of nowhere!

We met with Beth’s preschool teacher, Miss Megan today to hear her progress and I am so happy to report that Beth is excelling in her development. It was fun to hear from her teacher the little things she does at school and how well she gets along with her classmates. I thought it was really interesting that her teacher told me that Beth is the only girl that the boys in her class will play with. I think that is because Beth has a brother and they will play trucks and action heroes and stuff, so when she goes to school she is willing to play that with the boys too. But of course she still loves her dolls and dress-up!

While Joey was off playing racquetball and doing his podcast, the kids and I colored Easter Eggs. We did some glittery ones and some just colored ones, we applied stickers to some as well. The kids enjoyed seeing the egg go into the cup white and come out with color! I don’t know what we are going to do with them now. Growing up, we always went somewhere to roll our Easter Eggs. We would make the most awesome trails with tunnels and ramps to send the eggs down. But I don’t know where we would go to do that around here. So they will probably just end up going in the trash – oh well, at least we had fun!

What an amazing day! We got lots of great family time today. We went to lunch at a good burger place called Chadders and then we headed over to the Orem Library. We found some good books and were about to head to the checkout line when the fire alarm went off. Unfortunately we had to put our books down and head out of the building. The police, ambulance, and fire truck came and apparently there was some smoke. But we didn’t see any fire. We were a little disappointed that we didn’t get to get our books, but what can you do? Instead, we headed off to go see a matinee of Monsters & Aliens. It was a fun movie and I love being able to go to movies with my family. On our way home we went back to the library, but of course it was closed, so I guess we will have to get some books another day. We spent a nice night just playing and being together. I haven’t had such a relaxing and impromptu day with my family in a long time.

Happy Easter! It was also Bethie Girl’s 4th Birthday today. We decided to just celebrate Easter and celebrate Beth tomorrow. The Easter bunny found us and gave the kids a Leapster 2 with some games and so after church the kids spent a lot of time together playing games. They also got to hunt Easter Eggs around the house. We also watched a movie on Jesus and tried to teach the kids what Easter is all about. The Easter bunny also brought us the movie, BOLT, so we watched that as a family too. A good day!

Mondays are now Joey’s official day for recording his podcast. Joey and Pete have started TREKWEST 5, a podcast where they review tv shows (starting with Star Trek, The West Wing, and Babylon 5 – hence the name). Joey is really enjoying this new endeavor and I was excited to be able to create a logo for them!

We finally decided that it was time to put the Christmas tree away. The kids were not very happy about it – but they did help me get everything into the boxes. That’s the nice thing about artificial trees is that you can wait as long as you want before putting it away – the tree is not going to die on you! I grew up with having real trees – so I really do enjoy that – but an artificial tree is nice too!

The kids love BUBBLES! They got some in their Christmas stockings this year and I finally let them use them today. They spent about 2 hours (on and off) blowing bubbles. It’s really fun to see them having so much fun and actually playing together.

Joey and I both love reading. Our home is filled with books and movies. I’ve been in several book groups and I really love the variety of books that I have read because of them. Books that I wouldn’t have chosen myself, but had such an impact on me. A few months ago, I started an online book club that brings scrapbooking and reading together. Every other month we meet together in a chatroom and discuss the book, then we do a layout about our feelings about the book, and then I create a digital scrapbook kit inspired by the book as a posting bonus. It has been really fun and I enjoy meeting with members of the digital scrapbook community, getting to know them, and discussing books. This month’s book was Cold Sassy Tree by Olive Ann Burns and the book club chat was held tonight. I’ve recently discovered audiobooks and this was one book that I actually listened to, instead of reading it and I am so glad I did. To some members the book was okay, but kinda boring, but I found the audio version wonderful! I loved the humor and relationships of the story very much and I felt the man who read the book on the audio did such a good job of bringing the characters to life for me. I didn’t want the story to end.

Fridays are racquetball nights for Joey and Pete. Sometimes more of the Homestarmy boys join in, but most times it is just Joey and Pete. I love it when the kids and I get to join them. I try to occupy the kids while they are playing and then the tradition continues as we go out to eat at Mings! It’s a Chinese restaurant with really great food. Joey and Pete are the owner’s favorite people and he always treats us so well, like free calendars and last night, it was free dessert for Chinese New Year. I’m really glad that Joey has such great friends and I’m glad he gets his racquetball nights!

I am a night person and I hate mornings. Even if I get 8 hours of sleep (which I usually don’t), I still hate getting up in the morning. I rarely eat breakfast and Joey doesn’t eat in the morning, so breakfasts around here are very simple and it is just the kids. It’s usually yogurt and Nutri-Grain Bars and sometimes Cold Cereal. We do love breakfast foods like pancakes, eggs and bacon – but we usually serve it as dinner instead.

One night, several months ago, we were putting the kids to bed and Joey came up with the Bedtime Express. As a family, we become a train and chug around the house with the last stop being the kids bedroom and their beds. The kids LOVED it! What was an impromptu idea became a nightly tradition. The kids take turns being the engine and caboose and it’s the last thing we do before bed.
