I love Chicken Cordon Bleu. It’s the perfect comfort food for me.  But I’ve never been great at making it – it just takes a long time and I’m not that great at breading things.  So this is perfect, because you get that same great taste, but it is so quick to put together! Serve it with some mixed veggies and maybe even some rice pilaf and you have the perfect meal!

Ingredients

  • 4-5 boneless, skinless Chicken Breasts, cooked and shredded
  • 16 slices Ham
  • 16 slices Swiss Cheese
  • Sauce
  • 1 cube butter
  • 4 tbsp flour
  • 3 cups Whole Milk
  • Juice from 1 Lemon
  • 2 Tbsp Dijon Mustard
  • 1 tsp Season Salt
  • 1 tsp Pepper
  • Topping
  • 1 cup Panko Italian Breadcrumbs
  • 4 tbsp butter

Instructions

Preheat the oven to 375 degrees. Grease a 9x13 baking dish.

Place shredded chicken breasts on the bottom of the baking dish. Take the slices of ham and chop it up and scatter it over the chicken. Lay the cheese slices over the top of the ham.

Melt the butter in a large saucepan and stir in the flour to form a roux. Pour in the cold milk and continually stir to make a smooth sauce. Cook until sauce thickens and then stir in lemon juice, mustard, salt, salt and pepper. Pour sauce over the chicken/ham/cheese mixture, making sure to evenly distribute.

Pour breadcrumbs into a ziploc bag. Melt the butter and then pour into the bag. Close the bag and mix the butter and crumbs together. Sprinkle the mixture over the top of the casserole.

Bake the casserole uncovered for 45 minutes.

This is my take on the traditional Tuna Noodle Casserole. I added a lot of veggies and it makes it so colorful and perfect for Fall. It also includes a unique topping (as you actually take 3 different types of crumbs and add them together)!I have a big fondness for casseroles. I know many people do not like “cream of” soups added to their casseroles and it is healthier for you to not use those – but I actually love the taste, so I do use it most of the time. I did add a can of cream of mushroom soup in this recipe to thicken it up a bit – but you could totally NOT use it and be fine. I loved this dish. It had a lot of flavor and I love all the added veggies. My kids even ate it after a little encouragement (because of the veggies.)

Ingredients

  • 2 tbsp olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, diced
  • 2 stalks of celery, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 16 oz egg noodles
  • 3 cups sharp cheddar/monterey jack, grated
  • 2 cups chicken broth
  • 1 cup half 'n half
  • 1 can cream of mushroom soup (optional)
  • 1 bag frozen peas
  • 1 bag frozen corn
  • 2 cans of tuna in water, drained and flaked
  • 4 tbsp butter, melted
  • 1 cup potato chips, crushed
  • 18 Ritz Crackers, crushed
  • 1 cup Italian Breadcrumbs

Instructions

Add olive oil to a large skillet and add onions and garlic. Cook for a few minutes and then add mushrooms. Cook for a few more minutes and then add celery and peppers. Cook on Medium-Low until mushrooms are browned and all vegetables are tender.

To the skillet add chicken broth, half 'n half, and cream of mushroom soup. Heat until boiling and then stir in peas, corn, and tuna. Simmer for 10 minutes.

Meanwhile, cook your egg noodles according to package directions for al dente. Drain and then add to a large casserole dish. Immediately stir in 2 of the cups of grated cheese and stir so it melts all over the noodles.

Pour sauce over the noodles. Top with remainder of grated cheese.

Mix potato chips, ritz crackers, and bread crumbs and butter and spread over the top. Bake at 400 degrees for 30 minutes.

Ingredients

  • 3 cups chicken, cooked and diced
  • 2 cans cream of chicken soup
  • 16 oz sour cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp minced garlic
  • 1 tsp minced onion
  • 1 tbsp lemon juice
  • 2 cups grated cheese
  • 4 cups Rice, cooked
  • Topping
  • 1/2 cup butter, melted
  • 3 cups Ritz crackers, crushed
  • 1 Tablespoon poppy seeds

Instructions

Preheat oven to 350 degrees.

Mix together chicken, soup and sour cream in a large bowl. Add in Worcestershire sauce, garlic, onion, and lemon juice. In another bowl, mix together crushed crackers, poppy seeds, and melted butter and stir until butter is completely incorporated.

Spray a 9×13″ baking pan with non-stick cooking spray. Spread chicken mixture on the bottom and top with cracker mixture.

Cover pan with foil and bake for 15 minutes. Remove foil and bake for 15 more minutes. Serve over rice.

Ingredients

  • 12 refrigerated crescent rolls
  • 1 can cream of chicken soup
  • 1 cup cheddar cheese, grated
  • 1/2 cup heavy whipping cream
  • 1/2 cup milk
  • Filling
  • 4 ounces cream cheese (very soft)
  • 4 tablespoons butter (very soft but not melted)
  • ½-1 teaspoon garlic powder
  • ⅓ cup onion, finely chopped
  • 2 cups cooked chicken breasts, finely chopped
  • ½-¾ cup finely grated cheddar cheese
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Sauce
  • 2 cups heavy whipping cream
  • 1 cup milk
  • 2 cups grated cheddar cheese

Instructions

In a saucepan, mix cream, cheese, cream of chicken soup. Heat just until the cheese melts (do not boil).

In a bowl, mix the soft cream cheese with butter until very smooth, then add in garlic powder and onion.

Add in the chopped chicken and cheese. Mix well until combined. Season with salt or black pepper to taste.

Unroll the crescent rolls.Place 1 heaping tablespoon chicken mixture (or a little more) on top of each crescent triangle, then roll up starting at the thicker end.

Drizzle a small amount of soup mixture on the bottom of the dish.

Then place the crescent rolls seam-side down on top of the creamed mixture in the casserole.

Drizzle the remaining sauce on top and sprinkle with grated cheese.

Bake for about 30 minutes at 375 degrees.

Loved this. It was very easy to make and came together really quickly. Plus it had great flavor. It was basically a Lasagna without having to layer noodles!

Ingredients

  • 1 1/2 lb ground beef
  • 1 can tomato sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 16 oz egg noodles
  • 16 oz sour cream
  • 8 oz small curd cottage cheese
  • 2 cups cheddar cheese, grated

Instructions

Brown ground beef in a large skillet. Drain fat, then add tomato sauce and season with salt and pepper. Stir, then simmer while you prepare the other ingredients.

Cook egg noodles until al dente. Drain and set aside.

In a medium bowl, combine sour cream and cottage cheese. Add plenty of freshly ground black pepper. Add to noodles and stir.

To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, then sprinkle on half the grated cheddar. Repeat with noodles, meat, then a final layer of cheese. Bake at 350 degrees for 20 minutes, or until all cheese is melted.

Ingredients

  • 8 tbsp unsalted butter
  • 2 cups heavy cream
  • 2 cups parmesan
  • salt and pepper
  • 2 cups chicken, cooked
  • 1 pkg frozen mixed vegetables
  • 1 cup bread crumbs
  • 1 tbsp butter

Instructions

In a large skillet, melt butter over medium heat. Add heavy cream and heat until bubbly. Add parmesan and season with salt and pepper. Cook until it thickens.

In large casserole dish, add rice, chicken and mixed veggies. Add sauce and mix together well. Bake covered in a 375 degree oven for 30 minutes. Uncover and stir. Combine bread crumbs and melted butter. Sprinkle ontop. Bake uncovered for 20-25 minutes.
