My Grandpa & Grandma Sorensen lived next to us growing up and we saw them everyday. They were a big part of my life. I miss them. Anyway, I’ve been thinking a lot about them lately and one of my greatest memories was Sunday dinners. We always had Sunday Dinner at their house and my Grandma was a good cook. One of the things that I loved best was when she would make Steamed Pudding. I don’t have her recipe and I’ve really been wanting to try it again. Many people that I mentioned this to had never even heard of steamed pudding. It is like a very moist cake that has a pudding like sauce at the bottom. So I started looking on the internet and I came across a Chocolate Pudding Cake that sounded just about like the one my Grandma made. Now I was young the last time I had this from my Grandma (and I seem to remember her using a special bundt pan for hers), but it tasted heavenly and I’m pretty sure it was close to my Grandma’s recipe.I combined and adjusted a few recipes to come up with this one. It definitely looks like a mess, especially after you pour the boiling water over the top. But it totally cooks to perfection – I promise and its so easy! It’s definitely very rich, but with ice cream and whipped cream – its just divine. And I love that since it is so rich, a little goes a long way! I made this on a Sunday and we had it for dessert for several days. We liked it best warm, but it could be served cold or at room temperature if you prefer.

Ingredients

  • 2 1/2 cups flour
  • 2 1/2 cups brown sugar
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups chocolate chips
  • 2 tbsp unsalted butter
  • 4 oz unsweetened chocolate
  • 2 cups buttermilk
  • 1 tsp vanilla
  • 1/2 cup unsweetened cocoa
  • 2 1/2 cups boiling water
  • Vanilla Ice Cream
  • Whipped Cream Topping
  • Chocolate & Carmel Topping

Instructions

Preheat the oven to 350 degrees. Grease a 9×13 baking pan.

Combine flour, half of the brown sugar, baking powder, baking soda, and salt. Mix until combined very well making sure there are no lumps of brown sugar. Stir in chocolate chips.

Melt the butter and chocolate together over medium-low heat. A double boiler really works great for this. You want to keep stirring so that it doesn’t stick and burn.

Heat the buttermilk over low heat until barely warmed and then remove from heat. You don’t want this to boil-make sure it is just warmed.

Remove chocolate and butter mixture from heat and stir in the vanilla. Pour mixture over dry ingredients. Add the buttermilk and stir until mixed well. Spread into the prepared pan.

Take the rest of the brown sugar and combine with the cocoa until smooth. Sprinkle mixture evenly over the batter.

Pour the boiling water slowly and evenly over the batter in the pan. (Don’t mix)

Bake in oven for 40 minutes. Serve with Ice Cream and Whipped Cream and use the extra sauce in the pan to spread on top, along with additional Chocolate and Carmel Topping.

Keep any leftovers in the refrigerator and just warm each serving up in the microwave for a few seconds.

When I was growing up, we had a tradition in my family that every Sunday night we had pudding. My mom and my sisters and I would make Instant Chocolate Pudding and Cooked Vanilla pudding. To this day, I LOVE my pudding – especially chocolate. Occasionally, my older sister would make a batch of cream puffs to go with the pudding. We never actually filled the puffs the traditional way – we always just stuck them in a bowl and topped them with the pudding. Less work and still delicious!

Ingredients

    Puffs
  • 2 cups water
  • 1 cup unsalted butter
  • 1 tsp salt
  • 2 cups flour
  • 8 eggs
  • Pudding
  • 1 large box of instant chocolate pudding
  • 3 cups whole milk
  • Whipped Cream

Instructions

Bring water and butter to a boil in a saucepan. Sprinkle salt over butter/water mixture and mix together. Add in flour and stir until it forms a ball. Turn heat down to low and stir in 1 egg at a time until all eggs are blended very well. Remove from heat. Roll scoops of the puff mixture into balls and place on a parchment-lined cookie sheet. Bake in a 400 degree oven for 30 minutes.

While puffs are baking, whisk the chocolate pudding with the milk in a large mixing bowl and then set in refrigerator to cool and set-up.

After taking puffs from the oven, let cool for about 5-10 minutes. Then take each puff and cut in half. Place a scoop of pudding in between like a sandwich and then top with a dollop of whipped cream.

Ingredients

  • Package of Oreos
  • 2 pkgs Chocolate Pudding Mix
  • Whip Cream (fresh cream is the best)

Instructions

Put oreos in a food processor and blend until the cookies are a very fine texture. Mix up the pudding mix according to the package directions.

1st layer – put 1/2 the oreos on the bottom of the pan and pour 1/2 of the pudding on top. Let it set. Add whip cream. 2nd Layer – add more cookies and pudding. Let set. Cover with Whip Cream and sprinkle with leftover cookie crumbs.

The kids have really enjoyed the “Spring Days.” They have been playing outside in the yard together and they get so worn out. They sleep much better and they are happier too, so it has been really great!

On our way to the mail today, Beth picked up a tree branch filled with beautiful blossoms. She was so delighted about it and kept it with her all day!

It was Bring Your Daughter to Work Day at Joey’s work so Beth got to go with her Daddy today. They had a great program for them with Breakfast, Lunch, and fun activities. They had a passport to go to different rooms that represented different countries and had fun learning activities at each of them.

Joey had to go to meetings in Salt Lake City today so after JJ’s school we headed up there to watch Joey play racquetball and go to Mings for Dinner. We got to visit with Sabrina, Brandon, and Pete and that is always so much fun!

Joey stayed overnight at Pete’s last night and then went to the Salt Lake Temple this morning. We picked him up at the Trax Station and went to lunch. We spent the rest of the rainy day at home. I picked up some Strawberries yesterday and made yummy Strawberry Shortcake for dessert. I whipped up homemade cream for the first time and it tasted really good! The whole family loved it!

The kids were sick today, so we didn’t get to go to church. We watched some movies, played, worked on our computers, and just spent the whole day in the house. We ended the day with our new Sunday tradition – Chocolate Pudding!
