Creamy Comfort Food at its finest!

Ingredients
- 4 strips of bacon, cooked and crumbled
- 1 tsp minced garlic
- 1 tsp minced onion
- 2 packets dry ranch dressing mix
- 2 cans cream of chicken soup
- 16 oz sour cream
- 8 oz cream cheese
- 4-5 boneless, skinless chicken breasts
- 16 oz pasta
- 8 oz parmesean, grated
- green onions
Instructions
Spray slow cooker with non-stick cooking spray and place chicken in the crock pot.
Mix the bacon, garlic, ranch dressing mix, soup, cream cheese, and sour cream together and pour over the top of the chicken. Cook on high for 3-4 hours or low for 6 hours. Shred chicken with two forks. Cook pasta as directed on package and serve chicken over pasta. Top with parmesan and green onions.

Recipe Thursday | Ranch Dressing

Ranch Dressing is a big hit at our house – especially for me and my daughter.

This homemade dressing is perfect!

Ingredients
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup buttermilk
- 1 packet Hidden Valley Ranch dressing mix
Instructions
Whisk ingredients together. Serve as a salad dressing or dip for vegetables. Refrigerate any leftovers.

Recipe Thursday | Ranch House Crockpot Pork Chops w/ Garlic Mashed Potatoes

This is one of our favorite meals at our house. The pork chops were so tender and it was just very savory and a great comfort food with the mashed potatoes.

The perfect savory meal!

Ingredients
- 10 pork chops
- 3 packet dry Ranch Dressing Seasoning
- 4 cans Cream of Chicken Soup
- 2 cups milk
- salt and pepper
- 10 lbs potatoes
- 8 tbsp unsalted butter
- 16 oz sour cream
- 4 oz cream cheese
- 3 tbsp garlic powder
Instructions
Place pork chops, ranch, milk, and soup into crockpot and cook over high heat for 4 hours or low heat for 6 hours. Shred pork.
Place potatoes into a large pot of cold water. Place onto stovetop over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, sour cream, cream cheese, garlic powder, salt and pepper.
Scoop mashed potatoes onto serving plates and top with pork chops and gravy from crock pot. Enjoy!

So the kids didn’t have to go to school today and so they were watching some tv this morning while I was in my room. I suddenly heard the distinct sound that JJ makes when he has a seizure. I ran in and Beth was freaking out. So we waited out the seizure and got Beth calmed down. I was so relieved when he stopped seizing. I hadn’t even realized he had a fever – I knew he was coughing a bit, but had no idea he was as sick as he was. We took him to the doctor and found out he had walking pneumonia but that with some antibiotics he would be fine. JJ slept most of the day and already doing so much better after the first dose of antibiotics.

Because of JJ being sick yesterday I didn’t get packed until this morning and we didn’t leave for Orderville until late afternoon. We had a nice drive and such pretty scenery on our way down though. It was nice to finally get to Grandma and Grandpa’s house.

What a wonderful day. We had a great Thanksgiving dinner in the barn with all of my family – except for Charity and her kids. And then in the evening, was JJ’s baptism. I was so happy with how it turned out. There are so many times where I don’t know what is going on in JJ’s head or how much he is taking in – but tonight, I know he felt the spirit. He was so calm and happy and it just was so great to see him come up from the water with a smile on his face. I was so glad all the family could be there. Both Grandmas gave such wonderful talks and the Grandpas were the witnesses. Cousin Austin played the piano for us and there was just such a wonderful spirit there. I’m so thankful for JJ and for the gospel in our lives. Afterwards, we had our Thanksgiving pie and other desserts and all the men/boys played basketball in their church outfits! It was fun to go over to Kori’s house afterwards and visit and play games.

JJ and I spent the day with Grandpa and Uncle Clint at Sink Valley. We looked for cows, played in the snow, got some wood for Grandma’s fire, and got some Christmas trees. JJ loved being out there and I did too – even though it was pretty cold. It was a fun day, spent with just my buddy. Dad and Beth spent time with the rest of the family at home. Joey helped Grandma with some computer stuff and Beth got to play all day with Whitnee.

We decided not to return home today. The weather was pretty awful, so we just spent another day, playing at Grandma’s house and visiting. It was nice just to be with the family.

We woke up to another fun morning at Sink Valley. We played on the tire swing and I finished my book. We had breakfast and lunch and visited. We rode on the Gator and we went up to the Sawmill. JJ got to ride on the Cat with Grandpa and haul a log to the mill and we all watched that log become boards! We then had some lunch and headed to Orderville one more time. We picked up some hamburger and some sleeping bags that my parents had for us and then we started on our long drive home. We stopped in Nephi for dinner at the Flying J Restaurant and then got home at about 9:30pm. It was a nice weekend – despite all the traveling – and I’m so glad we went. But it is good to see home too!

Beth started Science Camp today! She got a bright yellow shirt and got to do tons of projects! She was so excited! They talked about birds, ducks, and frogs today and they got to make all kinds of nests and fun things. I’m so glad we got her in this program for the next 2 weeks!

While my son was in school and my daughter was in science camp this morning, I glanced through my Freecycle emails and found one for a movie today! So I snatched it up and the kids and I went to Enchanted! Yes, we have the movie, but it’s so much fun to go to the theater! I packed a lunch and we ate and watched the movie together – and it was for FREE!

We finally cut open the watermelon that my mom sent with us last weekend. It’s pretty big so I’m sure we will be eating on this all weekend. There’s just nothing like watermelon in the summertime! Pete came for dinner and it was nice to just take out the frozen enchiladas that I had made for my dinner exchange and stick it in the oven. Someday I am going to have a large freezer so I can just do the Dinner Once a Month thing and cook most of my meals in one day and then just can pull it out for dinner every night! But at least I will have a week’s worth of meals every month through my dinner exchange!

JJ and I loved Toy Story 3 so much that we decided to take Joey and Beth to it today. As we were finding a parking place at the movie theaters, a guy backed into our van. No one was hurt, but it was just so inconvenient since we had already paid for the movie. So Joey stayed out to wait for the police and to do all the swapping of information and the kids and I headed into the movie. Joey missed the commercials and the little cartoon that they do before the Pixar Movies (Night & Day) – but he did make it back in before the movie started! The van still works – we just can’t open the driver side door from the outside – we can from the inside. So now we have to deal with all the paperwork and insurance – but it could have been worse. See my good attitude LOL. Anyways, the movie was just as good as the first time. Not sure why – but it just affects me emotionally – I can’t even talk about this movie without crying. I just love the Toy Story movies – I really need to get my kit made for it! Anyways, after the movie – we just had a casual evening at home!

We watched Emperor’s New Groove for Family Movie Night. This is one Disney movie that both my husband and I ALMOST never watched. It was horribly advertised and just looked so stupid – but somebody told us that we should watch it and we did – and it’s so funny! We haven’t watched it in awhile even though we have the DVD, so we thought it was fun to watch it again. We had “llama burgers” [really just hamburgers – but we added the llama to make it fit the movie] and homemade french fries for dinner!
