
Nothing is better than cheesy potatoes! This is even better because you can cook it in the crockpot! Yay! We served it as part of our breakfast for dinner meal – but it would be a great side dish for anything!

The perfect side dish, especially for breakfast!

Ingredients
- 1/4 lb bacon, cooked and diced
- 2 onions, thinly sliced
- 1 green bell pepper
- 1 red bell pepper
- 6 potatoes, cubed
- 2-3 cups cheese, grated
- 1/4 cup green onions
- 1 tsp salt
- 1 tsp pepper
Instructions
Line slow cooker with foil. Layer half of each of the ingredients. Season to taste and top with butter. Repeat the layers and seasoning and butter. Top all with foil. Cover and cook on low for 6 hours.

Recipe Thursday | Shredded Pork with Mushrooms

Great flavor! Love crockpot recipes because it just cooks all day for you and you can come home and serve it!

Great pork slow cooker recipe!

Ingredients
- 3 lbs boneless pork shoulder, cut into large pieces
- 2 cans diced Tomatoes with Spicy Red Pepper, undrained
- 1 can tomato paste
- 1 pkg pork gravy mix
- 3 tbsp brown sugar
- 1 pkg sliced fresh mushrooms
Instructions
Spray inside of 4 to 5-quart slow cooker with cooking spray. Combine remaining ingredients in slow cooker. Cover and cook on LOW 8 to 10 hours or on HIGH 4 to 6 hours or until meat is tender. Separate pork into smaller pieces. Serve over mashed potatoes

Recipe Thursday | Ranch House Crockpot Pork Chops w/ Garlic Mashed Potatoes

This is one of our favorite meals at our house. The pork chops were so tender and it was just very savory and a great comfort food with the mashed potatoes.

Ingredients
- 10 pork chops
- 3 packet dry Ranch Dressing Seasoning
- 4 cans Cream of Chicken Soup
- 2 cups milk
- salt and pepper
- 10 lbs potatoes
- 8 tbsp unsalted butter
- 16 oz sour cream
- 4 oz cream cheese
- 3 tbsp garlic powder
Instructions
Place pork chops, ranch, milk, and soup into crockpot and cook over high heat for 4 hours or low heat for 6 hours. Shred pork.
Place potatoes into a large pot of cold water. Place onto stovetop over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, sour cream, cream cheese, garlic powder, salt and pepper.
Scoop mashed potatoes onto serving plates and top with pork chops and gravy from crock pot. Enjoy!

Recipe Thursday | Garlic Chicken Farfalle

I LOVED this recipe. It had amazing flavor and my kids loved it too! We will be making this a part of our regular family dinners!

Another perfect pasta dish!

Ingredients
- 16 oz Farfalle pasta
- 2 cups heavy whipping cream
- 3-4 boneless, skinless chicken breasts
- 3 cloves garlic, crushed
- 1 tsp pepper
- 1 tsp salt
- 1/2 cup butter
- 1 lb bacon, crumpled
- 1/2 cup shredded Parmesan cheese
- 1 bottle Lawry’s mesquite marinade with lime juice
Instructions
Cook chicken and bottle of marinade in crockpot on low for 6 hours. Pull marinated chicken out of the juices, allow to cool a little bit, and shred.. Set this aside. About a half-hour before serving, boil the pasta. In a small saucepan, melt butter, add garlic, whipping cream, pepper, salt, parmesan cheese, and crumpled bacon. Whisk together on low heat for 3-4 minutes. In a large bowl, pour over cooked, drained pasta, add chicken and stir through. Sprinkle a little bit more shredded parmesan cheese on top.

Nothing better than beef brisket cooked in the crockpot!

Ingredients
- 2 lbs beef brisket
- 1 onion, sliced
- 2 cloves garlic, minced
- 1/2 cup liquid smoke
- 1/2 cup Worcestershire sauce
- 1 pkg brown gravy
- 1 can beef broth
- Fresh ground pepper
- Kosher Salt
Instructions
Place brisket in crockpot. Mix together other ingredients and pour over brisket. Cook on low for 6-8 hours until brisket is tender!

Recipe Thursday | Ham & Potato Soup

This is one of my favorite soups. Perfect for cold weather!

It’s comforting and filling and yummy.

Ingredients
- 6 cups peeled, diced potatoes
- 1/3 cup chopped celery
- 1/3 cup finely chopped onion
- 1 cup diced ham (or just tear up deli-sliced ham)
- 4 cups water
- 10 chicken bullion cubes
- salt
- pepper
- 5 tbsp flour
- 5 tbsp butter
- 3 cups milk
- Shredded Cheese
Instructions
Stir all but milk, flour and butter into crockpot. Cook on low for 6-8 hours, check tenderness of potatoes. 20 minutes before serving, melt butter in a saucepan, add flour and gradually add milk, stirring constantly over med heat until thick. Stir mixture into crockpot. Let cook 15-20 minutes more. Serve with cheese on top.
