Ingredients

  • 2 lb boneless skinless chicken breast, cut into 1" cubes
  • 1 cup flour
  • 3 eggs, lightly beaten
  • 1 cup Panko Italian bread crumbs
  • 2 tbsp olive oil
  • 1 cup + 2 tbsp unsalted butter
  • 1 tbsp garlic powder
  • 3 cups Chicken Broth
  • 1 pkg Chicken Gravy
  • 1/2 cup Milk
  • 1 lemon, juiced
  • 1 lb of your favorite pasta
  • Parmesan cheese
  • Kosher salt
  • Black pepper
Find more recipes | www.designzbydede.com

Instructions

Add flour to a shallow bowl and season with salt and pepper. To a second shallow bowl, add lightly beaten eggs and season with salt and pepper. To a third shallow bowl, add Panko bread crumbs and season with salt and pepper.

Dredge chicken cubes in flour, shaking off excess. Coat with egg wash and then bread crumbs. Place on a dish and allow to sit for 10-15 minutes while you prepare the other ingredients.

Bring a large pot of salted water to a boil. Cook pasta until al dente.

In a large nonstick skillet, melt 2 tablespoon butter and 2 tablespoon olive oil over medium-high heat. Cook chicken cubes in batches for about 3-4 minutes per side. Remove each batch of chicken to a paper towel-lined plate to drain the excess oil. Add extra olive oil to the pan as necessary if it looks too dry.

Once chicken is finished, turn heat to medium and melt butter in the pan. Add garlic powderand sauté for 1 minute. Add chicken broth, chicken gravy, milk, and lemon juice. Allow to simmer for 8-10 minutes until slightly reduced. Turn heat to low and season with salt and pepper to taste. Add chicken back to pan and allow to simmer on low for 1-2 minutes. Serve over pasta with plenty of fresh grated parmesan cheese.

Recipe ThursdayZ | Crockpot Sesame Chicken

This week’s recipe  |  CROCKPOT SESAME CHICKEN
Sesame Chicken is my all-time favorite chinese food and while I definitely prefer the restaurant version (especially Ming’s Garden), sometimes a little less fried food is a good thing.  So here is a slightly healthier version that you can make in your crockpot!

Yields 8-10 servings

Ingredients

  • 1 cup honey
  • 2 cups soy sauce
  • 1 can tomato paste
  • 2 tbsp sesame oil
  • 3 tablespoons rice vinegar
  • 1 tsp ground ginger
  • 1 tbsp garlic powder
  • 1 tbsp minced onion
  • 1 tsp ground red pepper (or use red pepper flakes)
  • 4 boneless, skinless chicken breasts (lightly season with salt and pepper)
  • 3 teaspoons cornstarch
  • rice
Find more recipes | www.designzbydede.com

Instructions

Add all the ingredients (except chicken and cornstarch) to your crockpot. Mix well.

Add your chicken and cook for 6 hours (on high) or 8 hours (on low).

Remove your chicken from the crockpot and cut it up.

Add cornstarch to the sauce and simmer on HIGH for 20 minutes until the sauce thickens. (Taste test the sauce, if it is too salty or not sweet enough, add a little sugar)

Add the chicken to the sauce and stir.

Serve over rice.

Recipe Thursday | Chicken Cordon Bleu Casserole

Chicken Cordon Bleu Casserole by DeDe Smith
Chicken Cordon Bleu Casserole by DeDe Smith
This week’s Recipe | Chicken Cordon Bleu Casserole by DeDe Smith
I love Chicken Cordon Bleu. It’s the perfect comfort food for me.  But I’ve never been great at making it – it just takes a long time and I’m not that great at breading things.  So this is perfect, because you get that same great taste, but it is so quick to put together! Serve it with some mixed veggies and maybe even some rice pilaf and you have the perfect meal!

Chicken, Ham, and Swiss – what more could you ask for!

Instructions

Preheat the oven to 375 degrees. Grease a 9x13 baking dish.

Place shredded chicken breasts on the bottom of the baking dish. Take the slices of ham and chop it up and scatter it over the chicken. Lay the cheese slices over the top of the ham.

Melt the butter in a large saucepan and stir in the flour to form a roux. Pour in the cold milk and continually stir to make a smooth sauce. Cook until sauce thickens and then stir in lemon juice, mustard, salt, salt and pepper. Pour sauce over the chicken/ham/cheese mixture, making sure to evenly distribute.

Pour breadcrumbs into a ziploc bag. Melt the butter and then pour into the bag. Close the bag and mix the butter and crumbs together. Sprinkle the mixture over the top of the casserole.

Bake the casserole uncovered for 45 minutes.
