Recipe ThursdayZ | Mini Taco Bowls


This week’s recipe  |  MINI TACO BOWLS
These mini taco bowls are so much fun and are perfect as an appetizer or snack! It’s also a great way to use up some leftover taco mix. You could also cut out larger pieces of tortilla and use bigger muffin tins to make larger bowls. It just makes for a unique take on taco night!

Ingredients

  • uncooked flour tortillas
  • cooking spray
  • your favorite taco mix
  • cheese
  • sour cream
  • salsa

Instructions

Using an electric griddle, lightly cook your tortillas for around 2-3 minutes on each side.

Preheat oven to 375F.

Take a biscuit cutter and cut circles from your tortillas. Carefully fit the circles inside the cups of a muffin pan. Spray tortillas with cooking spray and bake for 10 minutes.

Remove tortilla bowls from pan and add your taco mix and toppings!

We have a taco night each week at our house – usually on Tuesdays. I like to serve a variety of mexican food on this night, so that its not always just tacos. This one is a really fun way to mix it up! Filling and tasty!

Ingredients

  • 1 lb ground beef
  • 1 package taco seasoning
  • 8 oz package cream cheese
  • 2 cups sour cream
  • 1 pkg jumbo pasta shells
  • 1 cup salsa
  • 1 cup taco sauce
  • 2-4 cups cheese, grated
  • 2 cups tortilla chips, crushed
  • 3 green onions, chopped

Instructions

Cook ground beef and add taco seasoning, sour cream, and cream cheese. Simmer until cheese is melted. Blend well. Set aside and allow to fully cool.

Cook shells according to package directions. Toss well with butter.

Pour salsa in the bottom of a 9x13 inch baking dish.

Stuff each shell with the meat mixture. Place the stuffed shells in the baking dish and cover the tops of the shells with taco sauce.

Cover and bake in the oven at 350 degrees for 30 minutes.

After 30 minutes, uncover, and sprinkle crushed chips and grated cheese on top. Cook for about 15 more minutes.

This is a very versatile recipe. I love that it is cooked in the crockpot all day and then you can serve it on your choice of rice, pasta, or wrapped up in tortillas! A great way to mix-it-up!

Ingredients

  • 3 boneless, skinless chicken breasts
  • 2 packages taco seasoning
  • 8 oz package cream cheese
  • 16 oz sour cream
  • 1 cup salsa
  • 2 cans cream of chicken soup
  • Toppings
  • Grated Cheese
  • Crushed Tortilla Chips
  • Serve with:
  • Rice, Pasta, or Tortillas

Instructions

Put chicken, taco seasoning, cream cheese, sour cream, salsa, and cream of chicken soup into crockpot. Cook for 4-6 hours on high. Shred Chicken.

Serve over pasta, rice, or wrap up in tortillas and top with grated cheese and crushed tortilla chips!

Ingredients

  • 1/2 cup water
  • 1 can Rotel
  • 1 can corn
  • 2 cups Spanish Rice
  • 16 oz Velveeta
  • Sour Cream
  • Shredded Cheese
  • Flour Tortillas

Instructions

In a skillet, combine chicken, water, Rotel, and taco seasoning. Bring to a boil. Add rice and simmer on low for 5 minutes. Add Velveeta and corn, and stir occasionally until melted.

Place mixture in a tortilla and top with sour cream and extra cheese.

Ingredients

    Mexican Layer Dip
  • 1 can Refried Beans
  • 1 can Diced Green Chilies
  • Ground Cumin, to taste
  • 3/4 cups Grated Sharp Cheddar Cheese
  • 1 cup Sour Cream
  • 1 cup Guacamole
  • 3/4 cups Monterey Jack Cheese
  • 1 can Black Olives
  • 1 cup salsa
  • Guacamole
  • 2-3 avocados, depending on size. Peel, pit and mash
  • Juice of 1 lime
  • 1/2 c diced onion
  • 3 Tbsp cilantro, chopped
  • 2 tomatoes, diced
  • 1 tsp minced garlic
  • 1 pinch cayenne
  • 1 tsp salt
  • Salsa
  • 1 can Whole Tomatoes With Juice
  • 2 cans diced Tomatoes And Green Chilies)
  • ¼ cups Chopped Onion
  • 1 clove Garlic, Minced
  • 1 whole Jalapeno, Quartered And Sliced Thin
  • ¼ tsp Sugar
  • ¼ tsp Salt
  • ¼ tsp Ground Cumin
  • ½ cups Cilantro (more To Taste!)
  • ½ whole Lime Juice

Instructions

Layer Dip:

Begin by throwing the refried beans into a small pan over medium-low heat. Add several dashes of Tabasco sauce and a small can of (undrained) diced green chilies. Stir well. Next, sprinkle a little bit of ground Cumin.

Spread the beans on the bottom of a glass bowl or high-sided dish. Over this sprinkle the sharp cheddar. Next, plop your sour cream. And spread it into a single layer, being careful not to disturb the cheese underneath. The next layer is the guacamole. Spread it over the sour cream. Follow this with a layer of Monterey Jack Cheese and a nice sprinkling of chopped black olives. Lastly, place a generous layer of salsa.

Salsa:

Note: this is a very large batch. Recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.

Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed. Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

Guacamole:

In bowl, use a fork to mash together the avocados. Add in the lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour or serve immediately.

Ingredients

  • 1 lb. extra lean ground beef
  • 1 onion, chopped
  • 4-5 cloves garlic, minced
  • 1 1.25-oz. packet taco seasoning (about 1/4 c.)
  • 3 c. water, divided
  • 2 28-oz. cans diced tomatoes
  • 1 15-oz. can tomato sauce
  • 2 15-oz. cans kidney beans, rinsed and drained
  • 1 can corn, drained
  • Toppings: sour cream, shredded cheese, crushed tortilla chips, tortilla strips, guacamole, etc.

Instructions

After browning the meat, place all the ingredients into a slow cooker and cook on low for about 6-8 hours.
