This week’s Recipe | PERSONAL PIZZAS by DeDe Smith
Pizza makes a great meal and my family loves it, especially my son. He would live on it if I let him. Personal pizzas are perfect for making at home. You can get your whole family involved and everyone can make their own pizza with their choice of toppings!
This recipe makes 18 good sized personal pizzas. You could divide the dough and make half into pizzas and freeze the other half of the dough for later use! Or as we do it at our house – make all the pizzas and then heat them up as leftovers on another day! This dough can also be used for making breadsticks (use the garlic spread seasoning too)!
There’s just nothing better than pizza night!

Ingredients

  • 2 cups warm water
  • 2 packets active dry yeast
  • 3 tbsp honey
  • 3 tsp salt
  • 4 tbsp olive oil
  • 5-6 cups flour
  • 1/4 cup unsalted butter
  • 1 tbsp garlic spread seasoning
  • 1 jar marinara sauce
  • 1/2 cup parmesan cheese
  • 6 cups mozzarella cheese
  • Toppings - Pepperoni, Canadian Bacon, Onions, Green Peppers, Mushrooms, Olives, etc.

Instructions

In the mixing bowl of your stand mixer, stir yeast, honey, and water together. Let it sit for 5 minutes. Add salt, olive oil and half of the flour and mix well. Add the rest of the flour - a little bit at a time - and mix well until the dough is slightly tacky, but doesn't stick to your finger when you touch it. Using your dough hook, knead the dough on medium high from 5-7 minutes. The dough should be smooth and the bowl should be clean. Roll the dough into a ball and place in a lightly greased bowl and cover with a towel. Let rise 1-2 hours.

Preheat oven to 450 degrees. Place parchment paper on baking sheet(s).

Melt butter in the microwave and then stir in the garlic spread seasoning.

Punch down dough and divide into 18 pieces. Roll each piece into a ball. Take one of the balls of dough and using your hands, spread into a rough circle - as thin or thick as you like it.

Take a pastry brush and spread some of the garlic/butter mixture on the dough.

Add a large spoonful of marinara sauce on top of the garlic/butter mixture.

Sprinkle dough with cheeses and then add the toppings of your choice.

Repeat with the rest of the pizzas. You should be able to fit 6 of the pizzas on one baking sheet.

Bake for 12-15 minutes.

Ingredients

  • 1 tube refrigerated crescent rolls
  • mini pepperoni
  • 4 pieces string cheese, cut in half
  • 1/4 teaspoon italian seasoning
  • 1 tbsp butter, melted
  • Marinara sauce for dipping

Instructions

Preheat oven to 375 degrees. Unroll crescent dough; separate into 8 triangles. Place 4 pepperoni slices on the large end of each triangle. Place one half string cheese on the top of the pepperonis. Roll up towards point. Place roll ups at least 2 inches apart on a lightly greased cookie sheet.

Mix together Italian seasoning and melted butter. Brush over the tops of the roll ups. Bake for 10-12 minutes or until golden brown.

Life 2012 | J.J. turns Ten!

JJ turned 10 on January 26th. I can’t believe my little boy is 10 already. He has gone through a lot in is young life as we struggled with his developmental delays and the eventual diagnosis of Autism. But I’m so proud of him for all he has accomplished and the person he is becoming.

I wanted to share 10 things about who JJ is at this time in his life:

1. He is so excited about everything. He always seems to have a inner delight about even the little things in life.

2. He has an amazing memory and can remember even the littlest things about life or things people say, even if you don’t think he is listening or noticing what is going on around him, HE IS.

3. He loves video games. Getting a DS for his birthday was a huge event in his life. The first thing he talks or asks about every day is that DS and the games. “Can I play the DS as soon as I get home?” He also loves to play on the Wii and computer games. He has a bit of trouble with the coordination of it sometimes, but he keeps trying and enjoys it even if he loses. He also LOVES to just watch other people play, especially his Dad.

4. He loves going to Cub Scouts. Its hard for him sometimes with the requirements and the things he has to do – but he still loves to go. I’m so grateful for the leaders and the other boys who are patient with him and make him feel like he belongs.

5. Everyday when JJ gets home from school, I read little notes from his teachers and they always say how happy he is and how helpful he is with everyone. It’s so good to hear. Sometimes we struggle at home with him getting overwhelmed and overstimulated and it causes fights and grumpiness with his sister and us (his parents), but its so nice to know that he is so happy with everyone else. He’s happy at home too (most of the time), but its good to know he gets along so well with the teachers and the other students in his Life Skills Class.

6. He loves FOOD. It seems like we can never fill that skinny little tummy of his. He will eat twice as much as I do and still be hungry. He rarely has things he doesn’t like and its nice to just put something in front of him and have him eat it. Not sure what we are going to do when he is a teenager as he is already eating us out of house and home!

7. JJ ADORES the show Phineas and Ferb. His favorite character is Agent P/Perry. He just loves everything about it. He’s always pretending to be Agent P and playing with his Phineas and Ferb toys. He loves talking about the show and reading about the show and playing the show. It’s pretty much all we hear about from him.

8. JJ is very helpful. He hardly ever complains when I ask him to do chores and little things to help me around the house.

9. JJ has a movie bug just like his parents. He loves watching movies and tv shows. Even though you would think it would be an overstimulator (and it can be sometimes) – most of the time, it is something that actually calms him when he needs a little down time.

10. JJ loves to travel. While I can’t wait to take him on a plane someday, cause I know he’ll love it, but for now he loves to travel in the car and he loves taking the school bus everyday. And he loves riding on trains and the TRAX. He is very content to gaze out the window and see where we are going. I’m never sure what is running through his head, but I’m sure its inspiring and its fun to watch his delighted eyes as he gazes out that window!

I love you JJ and I’m so happy to be your mom.

JJ was so excited about his birthday and he had a great day! I just thought I would share some of the fun he had that day.

He was so excited that his birthday fell on a Thursday – which is pizza day at his school. Pizza is his favorite. Even better, it was parent teacher conferences this week and they invited parents to come to lunch with their kids. So I got to go have a picnic with JJ in his school’s gym on his birthday! I also brought donuts for him to share with his class and he was so excited about that.

schoollunchWhile JJ was at school, I spent the morning/afternoon (after going to lunch with him), creating a Agent P cake for him. I first made 4 mini cookie cakes. (I just made my red velvet cookies and put some cream cheese frosting in between each layer). I think I did about 5 cookies on each little cake. Then I frosted the cakes with chocolate cream cheese frosting. Then, I used fondant for the first time to create the Agent P, that I put in the middle. It didn’t turn out exactly as I had planned, but it was pretty good. I used green sprinkles on top of the cakes to look like Agent P was peeking out of the grass/ground to head out on a spy adventure. I admit that cake decorating is not my forte, but JJ loved it and that’s all that mattered.

cakeAfter school, JJ got to watch some movies and play. For dinner, of course, we had Pizza and JJ was so happy to have it twice in one day!

Then the moment he was waiting for…his presents. I wasn’t quite able to capture how truly happy he was when he opened his Nintendo DS. It was really like a dream come true for him. The rest of his presents were games and additional stuff to go with the DS. (Oh and of course he wore his Perry Shirt on his birthday).

Today was Beth’s first day as a Daisy Girl Scout. She was so excited to participate and get her uniform. I hope it is something she will enjoy! We all went to her special Investure meeting tonight where she received her daisy pin.

Today was Veteran’s Day. I’m so blessed to live in this country and I honor all those wonderful people who serve the United States of America. I really loved seeing all the flags flying as I drove Beth to school.

I’m so grateful for afternoon kindergarten. Mornings seem to be getting harder and harder for me so its nice to be able to go back to bed after JJ gets off to school. I’ve also enjoyed having some one-on-one time with Beth after I get back up – with lunch, conversation, and our drives to her school!

We had practice for the primary program this afternoon and the kids did pretty good. They loved the pizza party afterwards and then they got to play in the leaves before Aaron and Joey got them raked up and put away. It’s fun to see them enjoy the simple things.

The Primary program was today. Beth did a fabulous job on her part. JJ did okay – at least he got up there and tried – he was really nervous and you couldn’t understand what he said, but glad he did it anyways. The primary music still touches me and it was nice to listen and join in now that I am a primary teacher.

The kids ditched school today and we went up to Salt Lake City to watch Lane, Colby, and Clint in the State Cross Country. Colby did amazing and got 3rd place. Unfortunately, Lane didn’t do as well as usual and he didn’t place. It was kind of a bummer – it being his senior year – but he did earn Academic All-state and that’s wonderful. It was fun to be with all the family.

Although, its late in the season, I have been wanting to go for a nice Fall Drive and see the colors and leaves. I finally decided tonight was the night. After the kids got home from school, we headed up the canyon – and even though it has better colors earlier in the season – there was still lots of beautiful leaves to gather and enjoy! The kids really enjoyed it.

A nightly ritual for Joey and the kids include the “burrito.” They can choose from regular sized or “big” bean or cheese burrito and they get all tucked in with their blankets. And then just for good measure – Joey adds “rice” which includes a good tickle! The kids love it!

This afternoon the kids got to go to the school and meet their new teachers for this year. They were able to tour their classrooms and visit with their teachers. They look forward to having Mrs. Hokanson and Mrs. Graham as their teachers!

The big day has arrived. JJ’s first day of school. He was so excited to have his new backpack and new school clothes and get to ride the bus again this year! He had a great first day and was all smiles when he got home!

Today, I wasn’t feeling so good. Have some kind of bug that makes me dizzy and headachy and cold. So I was kind of out of it all day. Towards the afternoon I was doing better so we headed off to the school for Beth’s Kindergarten assessment. She did really well and we’re all set now for her to start next week. It was definitely a pizza night and a $5 pizza from Little Caesars was just perfect. After the kids were in bed and I started catching up on Facebook, I learned of a tragedy in Orderville. My second cousin, Brian Harris, a Kane County Deputy Sheriff was shot and killed in the line of duty. It was such a shock and for the rest of the night I was reading articles about it and praying for his family. I just can’t believe that this has happened.

It rained off and on today and at dusk we headed outside for a little running and dancing in the rain. The kids were so cute about it and I had to capture some of their delight.

At the beginning of the week, my dryer died and today Joey and Clark headed over to a store to pick us up a used dryer. It works great and I really appreciate the devices we have in our lives! You don’t really notice how much you depend on something when you don’t have it! Yay for clean laundry again!

I finally broke down and bought an expensive electric razor for Joey and convinced him to use it. He has been on blood thinners for his blood clots and has been unable to shave using his regular blades. So for 6 months or so – he has worn a shaggy beard – but off it came today and I love that I can see his handsome face again! Thanks honey.

They held a candlelight vigil in Orderville today for Brian. I feel so badly that I live so far away from my hometown now and was unable to make it. It has been such a tough thing for our community but its so nice that they have rallied around the Harris’ and are in it together. I really hope they catch the guy who did this and I pray that the family will be okay.
