This week’s Recipe | Ham ‘n Potato Soup by DeDe Smith
My husband’s mom has a ham and potato soup that he LOVES and this is my version of the soup. I like more flavor to my soups so I use chicken broth. This soup is different than most ham and potato soups in that it is brothy instead of creamy. Most potato soups that I know is thicker and has milk in it. So this was a great change and I actually really liked it! Serve with some french bread or rolls!

Ingredients

  • 4 cups potatoes, diced
  • 2 cups ham, diced
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 cube of butter
  • 1/2 tsp salt, or to taste
  • 1 tsp black pepper, or to taste

Instructions

Place all ingredients into the crockpot and cook on low for 4-6 hours or until the potatoes are done.

Growing up in a small town and really close to the schools, I mostly walked home for lunch. But we really did have great cooks for our school lunches. This was one of the lunches that I enjoyed, when I did get school lunch. It’s easy and yummy and a great way to use up leftover mashed potatoes.

Ingredients

  • 8 hot dogs
  • 5-6 cups mashed potatoes
  • 3-4 cups grated cheese

Instructions

Split hot dogs lengthwise and spread out on a tin-foil lined baking sheet. Top each hot dog with mashed potatoes and cheese. Put in 400 degree oven for 25 minutes.

I love dutch oven potatoes. I grew up having lots of cook-outs on the family ranch! You can’t fully duplicate the taste of this meal cooked over the fire and in a dutch oven – but you can get close! This is a version of the dutch oven potatoes, but cooked at home in your casserole dish! You can also wrap up this mixture in a tin foil packet and cook it over the fire! Great comfort food and perfect for family time!

Ingredients

  • 2 lb ground beef
  • 8-10 Potatoes, diced
  • 1 package of baby carrots, cut up
  • 1 large onion, diced
  • 1 tbsp garlic powder
  • 1 tbsp montreal steak seasoning
  • 2 tsp salt
  • 3 cups cheese, grated

Instructions

Form 6 patties out of the ground beef and place in a aluminum-foil lined 9×12 pan. Sprinkle the patties with plenty of salt, steak seasoning, and garlic powder.

Mix potatoes, carrots, and onion and place on top of the hamburger patties. Sprinkle again with salt, pepper, and garlic powder. Top with a layer of aluminum foil and seal edges. Bake in a 375 degree oven for 1 1/2 hours.

Top with grated cheese, ketchup and/or ranch dressing.

Ingredients

  • 1/4 lb bacon, cooked and diced
  • 2 onions, thinly sliced
  • 1 green bell pepper
  • 1 red bell pepper
  • 6 potatoes, cubed
  • 2-3 cups cheese, grated
  • 1/4 cup green onions
  • 1 tsp salt
  • 1 tsp pepper

Instructions

Line slow cooker with foil. Layer half of each of the ingredients. Season to taste and top with butter. Repeat the layers and seasoning and butter. Top all with foil. Cover and cook on low for 6 hours.

Ingredients

  • baked potatoes, slightly cooled
  • melted butter
  • kosher salt and black pepper
  • shredded cheese (cheddar, gruyere, fontina, pepperjack, or other of your choice)
  • eggs
  • additional fillings of your choice: sauteed vegetables, green onions, bacon or ham, etc.

Instructions

Slice a layer off the top of each potato. Use a spoon to gently scoop out insides, leaving a thin layer of potato against the skin and avoiding puncturing the bottom. Reserve scooped potato for another use.

Brush inside of each potato with melted butter and sprinkle with a little salt and pepper. Sprinkle a layer of shredded cheese into each potato and add fillings as desired (vegetables, diced meat, etc.) Fill each potato about 3/4 full. Crack one egg into each potato. Sprinkle with a little more salt and pepper. Top with additional cheese and toppings if desired.

Place potatoes on a baking sheet and cook for about 20 minutes on 350 degrees. Egg whites should be set and yolks soft.

Potato Puffs:

What to do with leftover potato pulp?: Make some potato “puffs”…

Add an egg to the leftover potato pulp, ham, chives, cheese….Mix thoroughly. Place in buttered mini muffin tins… sprinkle with extra cheese and chives. Bake at 350 until nicely puffed…

Ingredients

  • 6 large baking potatoes
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tbsp butter
  • 2 tsp onion salt
  • 2 tsp garlic salt
  • salt & pepper
  • Grated Cheese
  • Parsley
  • Potato Skins:
  • Leftover Tops from the Potatoes
  • Olive Oil
  • Season Salt
  • Bacon
  • Cheese

Instructions

Preheat oven to 400 degrees. Microwave potatoes on high for 10 minutes. Bake in oven until tender, about 30 minutes. Cut off top of each potato (See bottom of this post for a great way to use up the tops of these potatoes.)

Scoop Flesh from potatoes into a medium bowl, reserving shells. Add cream cheese, sour cream and butter to potato flesh.

Beat potato mixture with a mixer set at medium speed until smooth and creamy. Add onion, garlic, salt, and pepper.

Spoon potato mixture into potato shells. Sprinkle with cheese. Reduce oven temperature to 350 degrees and bake until cheese melts and potatoes are heated through, about 15 minutes.

Potato Skins:

Cut leftover tops into wedges. Coat with oil and season salt. Top with Bacon and Cheese and bake until golden!
