This week’s Recipe | Red Velvet Oreos by DeDe Smith
These are the perfect treat for holidays (especially Christmas and Valentine’s Day) and really any day that you want to make better!
 

 

MORE FUN: Now here’s where you can get lots more creative and make these cookies more festive! After baking the cookies with the recipe below…
 

Using small metal cookie cutters – take the cooled baked cookies and cut out shapes. Then put small amount of filling in between 2 shaped cookies.

You could try coloring your filling too! After filling and topping your cookies – roll sides in sprinkles!

Yields 12 Cookie Sandwiches

Red Velvet Oreos

When you usually think of homemade oreos – you think of using a chocolate cake mix – but I promise you the Red Velvet ones are so much better!

Ingredients

  • 1 box red velvet cake mix
  • 1/2 cup butter, softened to room temperature
  • 2 eggs
  • Cream Cheese Filling
  • 1/2 cup butter, softened to room temperature
  • 8 oz cream cheese, softened to room temperature
  • 1 lb powdered sugar
  • 1 tsp Vanilla

Instructions

Preheat oven to 350 degrees. Mix ingredients until combined.

Put a spoonful of cookie batter into your hand and roll it into a ball. Place onto baking sheet about 2 inches apart.

Bake for 10-12 minutes. Cool.

To make filling: mix butter, cream cheese and vanilla. Gradually add sugar and mix until smooth.

Spread filling on one cookie and then top with another one!

Over the weekend I realized that my drivers license had expired on my birthday – OOPS! So today while the kids were at their schools, I headed off to spend some time at the driver license office. An hour later and I was done and had my temporary license in my hand (until the permanent one gets mailed to me). I am thankful that it was shorter than I thought it would be and glad to have it over for another 5 years!

Beth is loving science camp and I think we’ll have to get her in every year. They made paper rockets today and got to shoot them off! We made up some red velvet cookies today – some for us at home and some to take to the Relief Society Dinner in the park. It was fun to leave the kids home with dad and go visit and play games with the ladies in my ward!

Today was Beth’s Science Camp field trip to the Planetarium and Bean Museum at BYU. I was so glad that I was able to go with her. She made a buddy at the camp and it was cute to see Beth and Rose together. We went to the museum first and then got to have a live presentation with some of the animals and then walked over to the planetarium. The kids thought it was an awfully far walk and I was very glad to get my “orange group” there safe and sound. We got to sit and watch the stars overhead while the lady showed us constellations and fun things. It was a fun day!

This summer has truly been the busiest one that I have experienced since becoming a mom. My kids are old enough now that they have things to do and places to go and so I guess I am now an official soccer mom/chauffeur. My hardest thing about being on the go so much is that it has been all in the MORNINGS. I would much prefer it being stuff in the afternoon/evening, but I guess that’s how life goes! This is the last week that I will have to be on the go in the mornings until school starts – and I truly am glad that my kids have had the opportunity to do fun learning things!

Beth’s last day of science camp and she was pretty sad about it. She loved Mrs. Peterson and we had to get a photo at the end of camp with her. I’m glad that Beth enjoys being in the classroom and learning. I can’t believe she is going to be in Kindergarten this coming year!

Today, was my monthly dinner exchange. I made Cheddary Pasta Casserole last night and had it all ready for today. I had planned on just going up to Salt Lake City and back, but I decided that I really didn’t want to be without my family today. So I impromptly planned a trip to the planetarium at the Gateway mall. So we dropped the food off at Brandon and Sabrina’s house and went to the Trax station and had a ride on the train that took us right to the planetarium. The kids loved exploring all the fun things they had there and Joey bought them some fun spiral balls. We also planned to go to the movie theater and see Despicable Me. Unfortunately, during the movie, Beth got sick and threw up all over Joey. They got cleaned up and then Joey and JJ finished the movie while I stayed out with Beth. We were hoping to also go see the children’s museum at the Gateway, but Beth was not doing so well. She also threw up at the Trax station while we were waiting for the train and also in the van on the way home. But even though my poor Bethie didn’t feel good, I think we had a good time.

We stayed home from church today because we weren’t sure if Beth was still sick and JJ was having a really hard day. Sometimes JJ just has days that he is really overactive and it doesn’t really mix with people. Beth was feeling good all day though – so we decided it must have been heat exhaustion and we got plenty of fluids in her today. For Family Movie Night we did Pete’s Dragon and had Dragon Eggs (Baked Potato Bar) and Corn on the Cob.

may10I still wasn’t feeling very well today, but JJ seemed just fine, so the kids went to school. I didn’t accomplish very much. It ended up being a rough evening. I burned the corn chowder and the kids were fighting and having a bit of a hard time. But at least my rolls turned out good. I don’t think I will be having corn chowder again anytime soon – I ended up being up all night and throwing up in the bathroom.

may11Last night was completely exhausting. I haven’t been that sick in a long time. Today wasn’t any better. I didn’t eat a thing all day and still felt so sick. But the kids and Joey were fine. Joey got to go on a field trip with JJ and they went to Fishing Day at Salem Pond. The wonderful community puts it on every year for all the special needs kids. They get to fish and have lunch and they bring home a fish and a fun hat. This is JJ’s second year and I went with him last year. I’m glad Joey got to go with him this year.

may12On the mend but still not feeling real great. After school today, Beth and I spent a long time playing with her ponies and princesses. She loves it when I take the time to play with her and I need to remember to enjoy these little moments more.

may13Beth has discovered that if she sleeps on her braids and when they are dry, she gets curly hair! So I’ve been practicing french braids on her and I’m getting better!

may14It was Beth’s last Show-and-Tell at school today and she wanted to do something special. So we made some flower red velvet cookies and she gave them to her class. Everyone loved it!

may15A very laid-back Saturday! The kids played all day and Joey watched them while I got to catch up on some rest. Then we played and did puzzles and watched movies and worked on computers. I finally took advantage of a gift certificate that I won at Christmastime for a photo that I took of my kids and got a Fandango gift certificate. So we used some of it tonight and we got Aaron to come over and watch the kids (they were in bed for the night anyways) and Joey and I went to a movie. We saw Letters to Juliet and I really enjoyed it! It was nice to go out with Joey – we haven’t done that lately.

may16I taught the Sunbeams class today and it was good to finally make it back to church. Since we finished The Lion, the Witch and the Wardrobe (Chronicles of Narnia) last week, we decided we needed to watch the movie for Family Movie Night. Our tradition is to watch half the movie – have an intermission and do dinner and then watch the last half of the movie. The kids loved Narnia and I can’t wait to read more of the books with them! Joey was great and volunteered to cook dinner and he made some lion head pancakes with scrambled eggs for the manes. He also tried his hand out at some other shapes too. He spelled out the kids names, he did an I Heart You pancake for me and a colts pancake for himself. But my favorite one that he did was a hidden Mickey pancake. So very cool!

JJ was still a little sick, so he stayed home from school today. The kids were actually really good today and played together all day. I thought this was the cutest candid photo. They were sitting in the rocking chair together – sipping their water and watching movies.

We went for a walk after dinner tonight and it felt like Spring. I think it is actually coming. I captured this adorable hug between my kiddos and I really love the moments when they are so good to each other. Unfortunately, Joey got our sickness now and he was really miserable today. He stayed in bed all day – I hope he gets better soon.

Our vacation is almost here! I am rushing around like a crazy woman trying to get laundry done, get packed, and clean the house. Beth was my little helper today as we got the bathroom cleaned and laundry done. I so can’t wait until Saturday!

Everything is ready! We are set to go on vacation tomorrow morning! Our countdown is down to one chain and our bags are all packed and ready to go! I can’t believe it is finally here – less than 24 hours and we will be on the bus. I’m a little nervous about all the stuff I have – but I think I have everything that I could possibly need. I think I am even more excited than the kids – is it Saturday yet?

We are on our way! The bus picked us up about 11:30am and we joined the Baker side of the family on the bus. JJ really loved riding on the bus – he just sat there staring out the window, so happy! When Beth first boarded the bus, her first words were “Where’s my cousin, Whitnee?” Unfortunately, she would have to wait one more day before Whitnee would come on the bus. We traveled to Nephi, Utah – had some lunch and then continued to our hotel in St. George. We were able to meet up with Lucas, Heidi, Jacee, and Landreth Alfred for dinner at Denny’s and it was so awesome to see them and visit with them, especially since it has been a few years since we have been able to be with them. Joey and the kids hung out in the motel room before bedtime, while I was able to visit with my cousins, my aunt, and my uncle for a couple of hours. A great start to our vacation!

What a day! It began about 7:30am when my parents and brothers and sisters arrived with their families. We had a total of 35 people on the bus (including our bus driver) and it was a good drive with all of us visiting, some sleeping, and watching DVDs. We had lunch in Barstow, California and we were able to go to In-N-Out Burger. YUM! We finally arrived at our hotel. We stayed at the Best Western Stovalls Inn. We could see the roller coasters at Disney’s California Adventure across the street. Then the highlight of the day came, when we walked to Downtown Disney and had dinner at Goofy’s Kitchen. It was a lot of fun for the kids. We got to see Goofy, Pluto, Geppeto, Chip, and Cinderella. Beth was so excited to see her favorite Disney princess. She even got to dance with her! The kids enjoyed tasting Goofy’s Kitchen’s specialty, Peanut Butter and Jelly Pizza and lots of other food. After dinner we walked back to our hotel and went swimming. The kids enjoyed splashing around in the children’s pool and Joey and I enjoyed the Hot Tub.

JJ didn’t have a school – teacher development day – so we just hung out at home. The kids were feeling better today and they were really feeling a bit shut-in, so we decided to go for a walk. We got the mail and just went on a short walk around the trailer park. We spent most of the day watching movies, cleaning up, and making hearts.

I felt pretty awful today. Thank goodness that Joey was able to take Beth to and from school for me. When Beth got back, we hung out on my bed playing ponies and watching The Swan Princess so I could get a little more rest. When JJ got home, we hung out with Cody and Becki for awhile, since Cody needed my computer for a school project.

Bedtime came and I put the kids to bed. Later I went in to check on them and there was JJ, once again resisting sleep. He had his head where his feet should be and of course was kicking with his legs – trying to stay awake. He gets so tired, but he is like his Dad in that he hates to go to sleep.

JJ came home from school today with a yellow post-it note from his teacher! He had a great day! And he was so excited to tell me the things he did at school. He usually doesn’t tell us much about his day, so this was really neat. He had made some things at school that he couldn’t wait for us to see tomorrow. He remembered what he had for lunch – corn dogs. And most of all he was really happy. I love days like this!

Today was an exciting day! We got to go to school lunch with JJ, even Dad was able to come. And it was PIZZA DAY, so that made lunch extra special. After lunch we met with JJ’s teacher, Mrs. Rains and got to hear how much JJ is improving. We learned more about what JJ is doing at school and we learned that JJ is reading at a Kindergartener level which is amazing! We are so proud of our boy.

Then to top off an already amazing day – shortly after we returned home, a big package arrived. My new camera came a day early! YAY! So for the rest of the day, I played with my new Nikon D40. I’m so excited to finally get a DSLR camera and I can’t wait to learn all that I can do with it!

I love the Scrap Girls Luncheons. It’s such a great time-out from life! We met at Mimi’s Cafe this time and I brought Beth with me. It was really nice to have a little date with my daughter and we had a lot of other Scrap Girls with their kids this time – so it was a lot of fun!

Once again we have another pipe leak. We are getting pretty sick of it. Hopefully we can get it taken care of soon. The kids helped Dad patch it up! It was a pretty lazy Saturday. I didn’t feel to well – so I got to have a long nap, which was good. The kids really played well together and it was a quiet day.

One of my favorite blogs, Bakerella, had a great recipe today that we just had to try. We really like homemade Oreos – and this recipe was even better – we used red velvet cake instead of devil’s food cake! Perfect for Valentine’s Day! We cut out little hearts from the cookies and made bite-sized goodies! SO GOOD!
